My favourite breakfast is usually a simple, but nutrient-dense affair. It’s always savoury; never a sweet to begin the day. Truth be told, I also don’t eat breakfast every day; only when I’m actually feeling hungry. And that’s when an egg is usually the first choice.

I happened upon a post written back in 2019 by Eric Kim, sharing his delight in savouring a soft boiled egg every morning. It’s almost poetic how he describes it, “I take a sharp knife and chop off its top, scooping up the bit of white that’s there. I sprinkle the spice mixture over the beheaded egg and dive my spoon into the yolk, which, if I’ve cooked it correctly, gushes out. Every time I do it, I feel a great sense of satisfaction at how dramatically the yellow dribbles out over the sides and onto my plate.”

This makes me nostalgic for the little egg cups my mom always had and used for serving me her made-with-love soft eggs. No idea what ever happened to those cute little egg cups. I still love a soft boiled egg and eat it nearly the same way — but instead of Eric’s magic spice blend, I sprinkle sea salt and add a little ‘bean’ of butter just like my mom used to serve them.

What nicer thing can you do for somebody than make them breakfast?

  1. boiled eggs remind me of all the Enid Blytons I grew up eating [Lol, I meant to write Reading but it came out as eating!) Generally, there was always a boiled egg to sustain the adventurous four (or whichever group it happened to be) as they caught spies, and rescued their parents!

    I like my boiled eggs to have a bright yellow, crumbly yolk. However, I like my fried eggs to have just set with a thin cooked veneer hiding a runny yolk which splits open on to my toast on which the fried egg is sitting!

  2. When we began our keto diets a few years ago, breakfast was always a soft-boiled egg, accompanied with a half of an avocado. Many times it would be dusted with salt-free garlic and herb seasoning and a little Cholula hot sauce. As of late, we add a multi-grain piece of toast to spread the egg and avocado over.

  3. Snap! I rarely begin the day with a sweet.Perhaps, if I can beat the possums and bats to the papaya…
    Peter likes fruit-and-yoghurt to begin.And for years I’ve made poached egg on toast.It was the easiest when we both were working! And ALWAYS fresh-brewed coffee.
